Ingredients
2 Eggs
Grated zest of 1 orange
60ml full cream milk
1/4 tsp ground cinnamon
2 large, thick slices of white bread or 4 smaller slices
Juice of 1 orange
75g of Marmalade
50g Caster sugar
1 tbsp Butter

Instructions
Whisk the eggs, zest, milk and cinnamon in a wide shallow dish. Soak the bread slices in this mixture for 2 minutes.
Whilst bread is soaking, bring the orange juice, marmalade and sugar to the boil in a saucepan, turn down the heat and allow to simmer for 3-4 minutes. Let the syrup stand while you are cooking the bread.
Heat the butter over medium heat, in a heavy based frying pan and cook the eggy bread for about 2 minutes a side or until golden.
Serve the french toast with syrup, and extra syrup on the side.
